Stew and Dumplings – Recipe for Gluten Free & Dairy Free version

Stew and Dumplings

Stew and Dumplings is true comfort food and wonderfully warming.

Stew Ingredients

500g diced lamb or 500g of your favourite vegetables and beans

Ideas –

Use roots for bulk – potato, sweet potato, turnip, parsnip, carrots, swede
Use beans to add protein – any you can think of except soya beans obviously – if you can have lentils you can use those too.

Olive oil

Two potatoes chopped
Any of your favourite vegetables chopped (basically fill the pan) – use leek, celery, cabbage, sprouts, herbs anything to add flavour
Marigold organic swiss vegetable bouillon stock cube (yeast & gluten free) made in to about 1-2pints depending on size of casserole dish

Instructions

  1. Fry lamb in olive oil until brown (for extra flavour fry onions and diced potatoes as well)
  2. Boil lamb and all the above in a pan then simmer for a good hour

then… if you want this with dumplings do this…

Dumplings Ingredients

175g Doves gluten free bread flour
2tsp baking powder
pinch of salt
2 x 2tbsps of sesame seeds (optional)
50g Vitalite
75ml of rice milk
Instructions

  1. Pre-heat the oven to 180oc
  2. Place flour, salt, sesame seeds and Vitalite in a bowl
  3. Rub in fat to dry ingredients (keep rubbing lightly – add plenty of air)
  4. Add enough of the milk to make a stiff dough (again keep it light)
  5. Make 4 equal sized blobs from your mix and lightly make into ball shapes
  6. Pour your stew into a casserole dish and place the 4 dumplings on the top
  7. Cook uncovered for 15-20 minutes (dumplings won’t’ go brown so just tap to see if they are cooked)

Serve straight away and enjoy!
