Banana Bread recipe which is Gluten Free, Dairy Free and Egg Free. Very Allergy friendly and Very Tasty!

225g Doves gluten free white bread flour
2 level tsp baking powder
50g Demerara sugar
3 mashed ripe bananas (use the very spotty ripe ones you don’t want to eat)
You may need a small amount of rice milk or water depending on how well the mixture comes together. You want the mixture to be somewhere between cake and dough.
- Switch oven on 180°c
- Rub Vitalite into flour then bung everything else in, stir and beat it you want to mix it well and add air
- Pour the mixture into a well greased and floured loaf tin* and then bake for 45 minutes
- Leave in the tin for about 5 minutes then tip out onto a cooling rack
Once cooled slice like cake and eat it as it is or spread with Vitalite and or jam.
This will freeze really well but freeze as soon as it is cool for best results
* Grease the tin in the normal way then pour in a little flour turn and tip the tin so all sides are coated in flour then tip out the excess.
